Bacon Baby Bok Choy

This super easy recipe is low carb, quick to cook, and best of all, DELICIOUS! Makes two servings. Nutritional info at the bottom.
3 baby bok choy bunches
4 slices thick cut bacon
2 cloves garlic, minced
1 shallot, chopped finely
1. Chop ends off baby bok choi and separate the leaves from stems. Chop stems into cubes.
2. Heat a frying pan to medium heat. Cook bacon to desired doneness. Remove bacon from pan and place in paper towel to absorb grease. Preserve bacon grease in pan. This is what you'll cook the veggies in!
3. Add minced garlic cloves, diced shallots, and baby bok choi stems to the hot pan and cook for about 2-3 minutes, stirring constantly.
3. Add the leaves and stir until wilted.
4. Serve and enjoy.
