Keto Bison and Pork Sausage Burgers

Tomorrow is the first day of summer, and that means it's grilling season! You know me, I like to be a little extra with my recipes, so instead of a beef burger I'm comin' at ya with a bison and sausage meat patty! Get ready to enter keto flavour country.

1 lb. ground bison meat

1 lb. ground sausage meat (I used Hertel's Ground Pork Sausage - they are local and gluten free!)

1 egg

2 tsp. dijon mustard

1 tbsp. Worcestershire sauce

1 tbsp. minced oregano

1 tbsp. minced rosemary

1 tbsp. minced thyme

1 tbsp. minced chives

  1. Preheat your barbeque to 260 degrees C (500 degrees F).

  2. Allow the meat to come to room temperature by leaving on the counter for about half an hour or so.

  3. Add all the ingredients into a large bowl with the meat.

  4. Mix thoroughly by hand for at least three minutes. This is critical for the meat to hold its shape as a patty and to fully incorporate all the flavours.

  5. Form into six patties of equal size, about 5.3 oz. / 150 g / .33 lb.

  6. Put on grill and turn heat down so that it will end up being 204 degrees C (400 degrees F).

  7. Cook until desired doneness (for reference, 5 min./side will be well done).

  8. Serve with your favourite toppings on a bun, in a lettuce wrap, or just by itself with a nice raw veggie plate!
