Overnight Cinnamon Vanilla Chia Pudding

This is a fantastic, simple ketogenic recipe that only gets better the longer it sits! It's great served cold, or if you're craving oatmeal you can heat it up and top with chopped nuts and whipped cream. Or just add whipped cream anyway. Delicious!
2 c. vanilla flavoured almond milk
1/2 c. whole chia seeds
1 tsp. cinnamon
1 tsp. vanilla extract
1 tbsp. Erythritol
Optional: whipped cream, chopped nuts (pecans are pictured), berries, it's all up to you!
1. Whisk all ingredients together in a bowl or container of your choice.
2. Cover and let sit in fridge for at least 12 hours (to allow chia seeds to absorb moisture)
3. Enjoy either cold or hot!
