Protein Pancakes - Keto, Dairy-free

What's for breakfast? How about a protein-packed drop-kick to the jaw of your day? These fluffy pancakes will have you kicking ass all the way to lunchtime.


1/4 cup coconut flour

3 large eggs

2 tbsp. oil (liquid coconut oil or a light olive oil is best)

1 tsp. baking powder

1 tsp. vanilla extract

1 scoop protein powder (I like Leanfit Completegreen Vegan Protein Powder in vanilla bean flavour)

1-2 tbsp. coconut milk or other milk (optional if batter is too thick - I like Original Coconut Beverage by Coconut Dream - Unsweetened)


1. In a large bowl, whisk the coconut flour, protein powder, and baking powder together, ensuring there are no clumps. Add in eggs, oil, vanilla extract, and salt. Mix well. Add in coconut milk in 1 tbsp. portions until desired consistency is reached (batter should be somewhat runny). 2. In a greased skillet over medium heat, add 1/4 cup portions of pancake batter and allow it to cook until bubbles start to form in the middle of the pancake, about 4 to 5 minutes. Flip the pancake and let it cook on the other side, about 4 more minutes, or until both sides are golden. 4. Serve warm with optional maple syrup (sugar free for keto or just don't use very much), blueberries, peanut butter, whatever you like!
