Strawberry Goat Cheese Fat Bombs

Yes, you read that right. Sweet fat bombs made with goat cheese. But let me be more specific: mild, soft goat cheese. This gives an otherwise sweet treat a whole different flavour profile, more akin to that of strawberry cheesecake made with mascarpone. It's sweet, but with a more full flavour profile that has a slight hint of umami. I tell you, it's otherworldly! Plus, these have the added benefit of enjoying fat bombs that are made without cow-based dairy, if you are allergic like me. But if you're not feeling terribly adventurous, feel free to make these bombs with good, old-fashioned cream cheese.

Ingredients

1/2 cup fresh strawberries, chopped and mashed lightly

3/4 cup mild, soft goat cheese or cream cheese

1 1/2 tbsp. erythritol or other low/no-carb sweetener

1/4 cup coconut oil

1 tbsp. vanilla extract


Directions

1. Let cheese and coconut oil sit out until they reach room temperature, 30 minutes to an hour.

2. Thoroughly mix all ingredients together.

3. Form into balls, 1 tbsp. in size. Evenly space on parchment-lined cookie sheet. Freeze.

4. Store in freezer. Will keep for 2-3 months (but you have unbelievable restraint if they last that long)!
